- 1 cup tomato juice (like Clamato)
- 1/2 cup ketchup
- 1/4 cup fresh lime juice
- 1 tablespoon hot sauce (like Tabasco)
- 1/4 cup chopped red onion
- 1/2 cup diced cucumber
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1 avocado, diced
- Salt and pepper, to taste
- Tortilla chips or saltine crackers, for serving
Instructions
- In a large bowl, mix together tomato juice, ketchup, lime juice, and hot sauce until well combined.
- Stir in the red onion, cucumber, tomatoes, and cilantro.
- Gently fold in the cooked shrimp and avocado.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve cold with tortilla chips or saltine crackers.
