Description

A zesty and refreshing Mexican Shrimp Cocktail made with succulent shrimp, tangy tomato sauce, crisp vegetables, and a splash of lime, perfect as a starter or light meal.


Ingredients

  • 1/2 cup diced cucumber
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • Salt and pepper, to taste
  • Tortilla chips or saltine crackers, for serving

Instructions

  1. In a large bowl, mix together tomato juice, ketchup, lime juice, and hot sauce until well combined.
  2. Stir in the red onion, cucumber, tomatoes, and cilantro.
  3. Gently fold in the cooked shrimp and avocado.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving.
