Description

These No-Bake Breakfast Cookies are a quick and nutritious grab-and-go option made with wholesome ingredients. Perfect for busy mornings or a healthy snack.

Ingredients

Units Scale
  • 2 cups old-fashioned rolled oats
  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1/3 cup mini chocolate chips
  • 1/4 cup ground flaxseed
  • 1/2 cup chopped nuts (e.g., almonds, walnuts)
  • 1/4 cup dried cranberries or raisins
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon (optional)
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth.
  2. Add rolled oats, ground flaxseed, cinnamon, and salt. Mix well.
  3. Fold in chocolate chips, chopped nuts, and dried fruit.
  4. Chill the mixture in the refrigerator for about 15-20 minutes to firm up.
  5. Scoop out tablespoon-sized portions and roll them into balls or flatten into cookie shapes.
  6. Store cookies in an airtight container in the fridge for up to a week.

Notes

  • Use almond or sunflower seed butter for a peanut-free version.
  • To make them vegan, use maple syrup instead of honey and dairy-free chocolate chips.
  • You can add protein powder for an extra boost.
