Description
Oatmeal Bread is a hearty, slightly sweet bread made with rolled oats, perfect for breakfast or as a wholesome sandwich base.
Ingredients
- 1 cup rolled oats
- 2 cups boiling water
- 1/3 cup brown sugar
- 2 tablespoons butter
- 1 tablespoon salt
- 1 packet (2 1/4 tsp) active dry yeast
- 1/2 cup warm water (110°F)
- 5 cups all-purpose flour (plus more for kneading)
Instructions
- In a large bowl, combine the oats, boiling water, brown sugar, butter, and salt. Stir and let cool to lukewarm.
- In a small bowl, dissolve the yeast in warm water and let sit for about 5-10 minutes until frothy.
- Add the yeast mixture to the oat mixture and stir to combine.
- Gradually stir in flour, 1 cup at a time, until a dough forms.
- Turn the dough out onto a floured surface and knead for about 8-10 minutes, until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
- Punch down the dough and divide in half. Shape into loaves and place in two greased loaf pans.
- Cover and let rise for another 30-45 minutes, or until the dough has risen about 1 inch above the pans.
- Preheat oven to 350°F (175°C). Bake the loaves for 35-40 minutes, or until golden brown and hollow-sounding when tapped.
- Remove from pans and cool on a wire rack before slicing.
Notes
- You can substitute honey for brown sugar for a different flavor.
- Use whole wheat flour for a more rustic and healthy variation.
- This bread freezes well for up to 3 months.
