Description

Oatmeal Bread is a hearty, slightly sweet bread made with rolled oats, perfect for breakfast or as a wholesome sandwich base.


Ingredients

  • 1 cup rolled oats
  • 2 cups boiling water
  • 1/3 cup brown sugar
  • 2 tablespoons butter
  • 1 tablespoon salt
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 cup warm water (110°F)
  • 5 cups all-purpose flour (plus more for kneading)


Instructions

  1. In a large bowl, combine the oats, boiling water, brown sugar, butter, and salt. Stir and let cool to lukewarm.
  2. In a small bowl, dissolve the yeast in warm water and let sit for about 5-10 minutes until frothy.
  3. Add the yeast mixture to the oat mixture and stir to combine.
  4. Gradually stir in flour, 1 cup at a time, until a dough forms.
  5. Turn the dough out onto a floured surface and knead for about 8-10 minutes, until smooth and elastic.
  6. Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  7. Punch down the dough and divide in half. Shape into loaves and place in two greased loaf pans.
  8. Cover and let rise for another 30-45 minutes, or until the dough has risen about 1 inch above the pans.
  9. Preheat oven to 350°F (175°C). Bake the loaves for 35-40 minutes, or until golden brown and hollow-sounding when tapped.
  10. Remove from pans and cool on a wire rack before slicing.

Notes

  • You can substitute honey for brown sugar for a different flavor.
  • Use whole wheat flour for a more rustic and healthy variation.
  • This bread freezes well for up to 3 months.
