Quick and easy one-bowl microwave scrambled eggs—perfect for a fast, protein-rich breakfast made in under 2 minutes.
Ingredients
- 2 large eggs
- 2 tbsp milk (or water)
- Salt, to taste
- Pepper, to taste
- 1 tsp butter or oil (optional)
- Optional add‑ins: shredded cheese, chopped herbs, diced veggies
Instructions
- Crack eggs into a microwave‑safe bowl. Add milk (or water), salt, pepper, and butter (if using).
- Whisk vigorously until mixture is smooth and well combined.
- Microwave on high for 30 seconds.
- Remove and stir with a fork, breaking up curds.
- Return to microwave and cook additional 20–30 seconds, then stir again. Repeat in 10‑second intervals until eggs are softly set.
- If using cheese or herbs, sprinkle on top and let sit 30 seconds to melt.
- Serve immediately.
Notes
- Microwave wattage varies: adjust timing accordingly—lower wattage may need slightly longer cook times.
- For creamier eggs, add a splash more milk or a small pat of butter.
- Don’t overcook—eggs will continue to firm up after microwaving.
- You can customize with chopped veggies, ham, spinach, or other fresh ingredients.
