Description

A delicious and easy one-pot Italian chicken pasta packed with tender chicken, pasta, and flavorful herbs all cooked in a single pan for minimal cleanup.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (14.5 oz) can diced tomatoes
  • 3 cups chicken broth
  • 2 cups uncooked penne pasta
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until browned, about 5–6 minutes.
  2. Add diced onion and cook for 2–3 minutes until softened. Stir in garlic, Italian seasoning, and red pepper flakes, and cook for another 1 minute.
  3. Pour in diced tomatoes and chicken broth. Stir to combine.
  4. Add uncooked pasta and bring to a boil. Reduce heat, cover, and simmer for 12–15 minutes or until pasta is cooked through, stirring occasionally.
  5. Stir in heavy cream and Parmesan cheese until well combined and creamy.
  6. Season with salt and pepper to taste. Garnish with fresh basil or parsley if desired and serve hot.

Notes

  • You can substitute penne with any short pasta like rotini or farfalle.
  • For extra flavor, add sun-dried tomatoes or olives.
  • Use rotisserie chicken for a quicker version.
