Description
A delicious and easy one-pot Italian chicken pasta packed with tender chicken, pasta, and flavorful herbs all cooked in a single pan for minimal cleanup.
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 1 (14.5 oz) can diced tomatoes
- 3 cups chicken broth
- 2 cups uncooked penne pasta
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken and cook until browned, about 5–6 minutes.
- Add diced onion and cook for 2–3 minutes until softened. Stir in garlic, Italian seasoning, and red pepper flakes, and cook for another 1 minute.
- Pour in diced tomatoes and chicken broth. Stir to combine.
- Add uncooked pasta and bring to a boil. Reduce heat, cover, and simmer for 12–15 minutes or until pasta is cooked through, stirring occasionally.
- Stir in heavy cream and Parmesan cheese until well combined and creamy.
- Season with salt and pepper to taste. Garnish with fresh basil or parsley if desired and serve hot.
Notes
- You can substitute penne with any short pasta like rotini or farfalle.
- For extra flavor, add sun-dried tomatoes or olives.
- Use rotisserie chicken for a quicker version.
