Description

A quick and easy one-pot meal combining seasoned ground beef, rice, and classic taco flavors. Perfect for a weeknight dinner with minimal cleanup.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 1 (10 oz) can diced tomatoes with green chilies
  • 2 1/2 cups beef broth
  • 1 (1 oz) packet taco seasoning
  • 1 cup canned corn, drained
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. In a large pot or deep skillet, heat olive oil over medium heat.
  2. Add diced onion and cook for 3-4 minutes until softened.
  3. Add garlic and ground beef; cook until beef is browned and cooked through. Drain excess fat if needed.
  4. Stir in rice, taco seasoning, diced tomatoes with green chilies, and beef broth. Mix well.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender.
  6. Stir in corn and black beans, and cook for another 2-3 minutes until heated through.
  7. Sprinkle shredded cheddar cheese on top and let it melt.
  8. Garnish with fresh cilantro if desired and serve hot.

Notes

  • Use ground turkey or chicken for a leaner option.
  • Top with sour cream, avocado, or jalapeños for extra flavor.
  • Leftovers can be refrigerated for up to 3 days.
