Description
A quick and easy one-pot meal combining seasoned ground beef, rice, and classic taco flavors. Perfect for a weeknight dinner with minimal cleanup.
Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 1 (10 oz) can diced tomatoes with green chilies
- 2 1/2 cups beef broth
- 1 (1 oz) packet taco seasoning
- 1 cup canned corn, drained
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot or deep skillet, heat olive oil over medium heat.
- Add diced onion and cook for 3-4 minutes until softened.
- Add garlic and ground beef; cook until beef is browned and cooked through. Drain excess fat if needed.
- Stir in rice, taco seasoning, diced tomatoes with green chilies, and beef broth. Mix well.
- Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender.
- Stir in corn and black beans, and cook for another 2-3 minutes until heated through.
- Sprinkle shredded cheddar cheese on top and let it melt.
- Garnish with fresh cilantro if desired and serve hot.
Notes
- Use ground turkey or chicken for a leaner option.
- Top with sour cream, avocado, or jalapeños for extra flavor.
- Leftovers can be refrigerated for up to 3 days.
