- 1 1/2 cups all-purpose flour
- 1/2 cup ground almonds (almond flour)
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1/4 cup fresh orange juice
- 1 tbsp orange zest
- 1/2 tsp almond extract
- Sliced almonds for topping (optional)
Instructions
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
- In a large bowl, whisk together the flour, ground almonds, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs, then add milk, vegetable oil, orange juice, orange zest, and almond extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Divide the batter evenly among the muffin cups and top with sliced almonds if using.
- Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
