- 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 1/2 tsp vanilla extract
- Red gel food coloring
- Blue gel food coloring
- Sprinkles (optional)
Instructions
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- Divide the dough into three equal parts. Leave one plain, dye one red, and dye the other blue.
- Roll each dough into a rectangle of equal size between parchment paper.
- Layer the dough rectangles on top of each other, then gently roll them together into a log to form a pinwheel pattern.
- Wrap the dough log in plastic wrap and refrigerate for at least 1 hour or until firm.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Slice the dough into 1/4-inch thick rounds and place on prepared baking sheets.
- Optionally, press sprinkles onto the edges of the cookies.
- Bake for 10-12 minutes, or until edges are just beginning to turn golden.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use gel food coloring to avoid adding too much moisture to the dough.
- Chill the dough thoroughly to help the cookies retain their shape.
- Store in an airtight container for up to 5 days.
