Description

A sweet, juicy peach pie filling made with fresh peaches and warm spices, ideal for pies, tarts, and cobblers.


Ingredients

  • 6 cups fresh peaches, peeled and sliced
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 3 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, diced


Instructions

  1. Toss sliced peaches with lemon juice and vanilla extract in a large bowl.
  2. In a separate bowl, mix sugars, cornstarch, cinnamon, and nutmeg.
  3. Combine peach mixture with sugar mixture and stir to coat evenly.
  4. Transfer to a saucepan and cook over medium heat, stirring constantly.
  5. Bring to a boil, then reduce heat and simmer for 2–3 minutes until thickened.
  6. Remove from heat and stir in butter until melted and smooth.
  7. Cool slightly before using or storing.
