Description
A sweet, juicy peach pie filling made with fresh peaches and warm spices, ideal for pies, tarts, and cobblers.
Ingredients
- 6 cups fresh peaches, peeled and sliced
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 3 tablespoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, diced
Instructions
- Toss sliced peaches with lemon juice and vanilla extract in a large bowl.
- In a separate bowl, mix sugars, cornstarch, cinnamon, and nutmeg.
- Combine peach mixture with sugar mixture and stir to coat evenly.
- Transfer to a saucepan and cook over medium heat, stirring constantly.
- Bring to a boil, then reduce heat and simmer for 2–3 minutes until thickened.
- Remove from heat and stir in butter until melted and smooth.
- Cool slightly before using or storing.

- Filling can be frozen in airtight containers for later use.
- Thaw frozen filling overnight in the fridge before use.
