Description

Peanut Butter Pretzel Bites are the perfect sweet and salty snack, featuring a creamy peanut butter filling sandwiched between crunchy pretzels and dipped in chocolate. Great for parties, holidays, or an easy no-bake treat.


Ingredients

  • 1 cup creamy peanut butter
  • 2 tablespoons unsalted butter, softened
  • 1/2 cup powdered sugar
  • 3/4 cup brown sugar
  • Mini pretzels (about 60)
  • 10 oz semi-sweet or milk chocolate chips
  • 1 tablespoon coconut oil or shortening (optional, for smoother dipping)

Instructions

  1. In a mixing bowl, combine peanut butter, butter, powdered sugar, and brown sugar. Mix until smooth and dough-like in consistency.
  2. Scoop out small amounts of the peanut butter mixture (about 1 teaspoon each) and roll into balls.
  3. Sandwich each ball between two mini pretzels and press gently to flatten. Place on a parchment-lined baking sheet.
  4. Freeze the pretzel bites for about 20-30 minutes to firm up.
  5. In a microwave-safe bowl, melt chocolate chips with coconut oil (if using) in 30-second intervals, stirring between each, until smooth.
  6. Dip each pretzel bite halfway into the melted chocolate and return to the baking sheet.
  7. Chill in the refrigerator until chocolate is set, about 15-20 minutes.
  8. Store in an airtight container in the refrigerator until ready to serve.
