- 1 cup creamy peanut butter
- 2 tablespoons unsalted butter, softened
- 1/2 cup powdered sugar
- 3/4 cup brown sugar
- Mini pretzels (about 60)
- 10 oz semi-sweet or milk chocolate chips
- 1 tablespoon coconut oil or shortening (optional, for smoother dipping)
Instructions
- In a mixing bowl, combine peanut butter, butter, powdered sugar, and brown sugar. Mix until smooth and dough-like in consistency.
- Scoop out small amounts of the peanut butter mixture (about 1 teaspoon each) and roll into balls.
- Sandwich each ball between two mini pretzels and press gently to flatten. Place on a parchment-lined baking sheet.
- Freeze the pretzel bites for about 20-30 minutes to firm up.
- In a microwave-safe bowl, melt chocolate chips with coconut oil (if using) in 30-second intervals, stirring between each, until smooth.
- Dip each pretzel bite halfway into the melted chocolate and return to the baking sheet.
- Chill in the refrigerator until chocolate is set, about 15-20 minutes.
- Store in an airtight container in the refrigerator until ready to serve.

- You can use crunchy peanut butter for added texture.
- Drizzle white chocolate on top for a decorative finish.
