Pina Colada Lush is a tropical no-bake dessert layered with a buttery crust, creamy pineapple coconut filling, and whipped topping—perfect for summer gatherings.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 (8 oz) package cream cheese, softened
- 1 cup powdered sugar
- 1 (8 oz) container whipped topping (like Cool Whip), divided
- 1 (20 oz) can crushed pineapple, drained
- 1 (3.4 oz) package instant vanilla pudding mix
- 1 cup cold milk
- 1/2 cup shredded sweetened coconut
- 1/4 cup chopped maraschino cherries (optional)
Instructions
- In a medium bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a 9×13 inch baking dish to form the crust. Refrigerate for 10 minutes.
- In a large bowl, beat cream cheese and powdered sugar until smooth. Fold in half of the whipped topping. Spread the mixture over the crust.
- In a separate bowl, whisk together pudding mix and cold milk until thickened. Stir in the crushed pineapple. Spread this layer over the cream cheese layer.
- Spread the remaining whipped topping evenly over the pineapple layer.
- Sprinkle shredded coconut and chopped cherries (if using) on top.
- Chill in the refrigerator for at least 4 hours, or overnight, before serving.
Notes
- Make sure the crushed pineapple is well-drained to prevent a soggy dessert.
- You can toast the coconut for extra flavor and texture.
- For a stronger coconut flavor, add a splash of coconut extract to the cream cheese layer.
