Description

Pina Colada Lush is a tropical no-bake dessert layered with a buttery crust, creamy pineapple coconut filling, and whipped topping—perfect for summer gatherings.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 oz) container whipped topping (like Cool Whip), divided
  • 1 (20 oz) can crushed pineapple, drained
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 1 cup cold milk
  • 1/2 cup shredded sweetened coconut
  • 1/4 cup chopped maraschino cherries (optional)


Instructions

  1. In a medium bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a 9×13 inch baking dish to form the crust. Refrigerate for 10 minutes.
  2. In a large bowl, beat cream cheese and powdered sugar until smooth. Fold in half of the whipped topping. Spread the mixture over the crust.
  3. In a separate bowl, whisk together pudding mix and cold milk until thickened. Stir in the crushed pineapple. Spread this layer over the cream cheese layer.
  4. Spread the remaining whipped topping evenly over the pineapple layer.
  5. Sprinkle shredded coconut and chopped cherries (if using) on top.
  6. Chill in the refrigerator for at least 4 hours, or overnight, before serving.

Notes

  • Make sure the crushed pineapple is well-drained to prevent a soggy dessert.
  • You can toast the coconut for extra flavor and texture.
