A comforting and flavorful soup inspired by the classic potsticker dumplings. This hearty soup combines the delicious flavors of pork, ginger, and garlic with tender dumplings and nutritious vegetables in a savory broth.
Ingredients
For the Dumplings:
- 1 lb ground pork
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 green onions, finely chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/4 tsp black pepper
- 30 round dumpling wrappers
For the Soup:
- 6 cups chicken broth
- 2 cups sliced shiitake mushrooms
- 2 cups baby bok choy, chopped
- 1 carrot, sliced
- 1/4 cup soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- Salt and pepper to taste
Instructions
- Make the Dumplings: In a bowl, mix together ground pork, garlic, ginger, green onions, soy sauce, sesame oil, and black pepper. Place a small spoonful of the mixture in the center of each dumpling wrapper. Moisten the edges with water, fold in half, and pleat the edges to seal.
- Cook the Dumplings: Bring a pot of water to a boil. Add the dumplings and cook until they float to the surface, about 3-4 minutes. Remove and set aside.
- Prepare the Soup: In a large pot, bring the chicken broth to a simmer. Add mushrooms, bok choy, carrot, soy sauce, rice vinegar, and sesame oil. Simmer for 10 minutes.
- Serve: Divide the cooked dumplings among serving bowls and ladle the hot soup over them. Season with salt and pepper to taste.
Notes
- You can customize the soup by adding other vegetables like snow peas or water chestnuts.
- For a spicier kick, drizzle with chili oil before serving.
