These festive Red, White, and Blue Cheesecake Bars are perfect for patriotic holidays, combining a buttery graham cracker crust, creamy cheesecake filling, and colorful fruit topping.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup blueberries
- 1/2 cup sliced strawberries
Instructions
- Preheat oven to 325°F (163°C). Line an 8×8-inch baking dish with parchment paper.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the pan to form the crust.
- Bake the crust for 10 minutes, then let cool slightly.
- In a large bowl, beat cream cheese and 1/2 cup sugar until smooth.
- Add eggs one at a time, beating well after each addition. Mix in vanilla and sour cream until smooth.
- Pour cheesecake mixture over the cooled crust and smooth the top.
- Sprinkle blueberries and sliced strawberries evenly over the top.
- Bake for 35–40 minutes, or until the center is set and only slightly jiggly.
- Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
- Cut into bars and serve chilled.
Notes
- Use fresh or frozen berries, but thaw and drain frozen ones before use.
- Chill thoroughly for best slicing and texture.
- Decorate with additional whipped cream or festive sprinkles if desired.
