Description

These festive Red, White, and Blue Cheesecake Bars are perfect for patriotic holidays, combining a buttery graham cracker crust, creamy cheesecake filling, and colorful fruit topping.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup blueberries
  • 1/2 cup sliced strawberries


Instructions

  1. Preheat oven to 325°F (163°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the pan to form the crust.
  3. Bake the crust for 10 minutes, then let cool slightly.
  4. In a large bowl, beat cream cheese and 1/2 cup sugar until smooth.
  5. Add eggs one at a time, beating well after each addition. Mix in vanilla and sour cream until smooth.
  6. Pour cheesecake mixture over the cooled crust and smooth the top.
  7. Sprinkle blueberries and sliced strawberries evenly over the top.
  8. Bake for 35–40 minutes, or until the center is set and only slightly jiggly.
  9. Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  10. Cut into bars and serve chilled.

Notes

  • Use fresh or frozen berries, but thaw and drain frozen ones before use.
  • Chill thoroughly for best slicing and texture.
  • Decorate with additional whipped cream or festive sprinkles if desired.
