Ingredients
- 1 box white cake mix
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup water
- Red food coloring
- Blue food coloring
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup fresh strawberries, chopped
- 1/2 cup fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Prepare the white cake mix according to package instructions using eggs, oil, and water.
- Divide the batter evenly into three bowls. Leave one plain (white), add red food coloring to one, and blue to another.
- Fill each cupcake liner with a spoonful of each color to create a layered effect. Bake for 18–20 minutes or until a toothpick comes out clean.
- Let the cupcakes cool completely.
- In a large bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Slice the cupcakes in half horizontally. Place one half at the bottom of each wine glass.
- Layer with whipped cream and berries. Repeat layers as desired.
- Top with extra whipped cream and garnish with a few berries.
- Serve immediately or refrigerate until ready to serve.
Notes
- Use gel food coloring for more vibrant colors without thinning the batter.
- These can be made a few hours in advance and stored in the fridge.
- Try using mason jars as an alternative to wine glasses for a more casual look.
