Description

Santa Fe Chicken Foil Packets are a flavorful, mess-free meal packed with seasoned chicken, black beans, corn, peppers, and cheese. Perfect for grilling, baking, or camping, this easy recipe delivers a Southwest-inspired dinner in a pouch.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup shredded Mexican blend cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • Lime wedges, for serving

Instructions

  1. Preheat grill to medium-high or oven to 400°F (200°C).
  2. In a small bowl, mix chili powder, cumin, garlic powder, salt, and pepper. Rub seasoning on both sides of each chicken breast.
  3. Cut 4 large pieces of heavy-duty aluminum foil. Drizzle each with a bit of olive oil.
  4. Place one chicken breast in the center of each foil piece. Top with black beans, corn, and diced bell peppers.
  5. Fold foil over contents and seal edges tightly to form packets.
  6. Grill or bake packets for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  7. Carefully open packets and sprinkle cheese on top. Reseal and let sit for 2–3 minutes to melt.
  8. Garnish with cilantro and serve with lime wedges.
