- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup shredded Mexican blend cheese
- 1/4 cup chopped fresh cilantro (optional)
- Lime wedges, for serving
Instructions
- Preheat grill to medium-high or oven to 400°F (200°C).
- In a small bowl, mix chili powder, cumin, garlic powder, salt, and pepper. Rub seasoning on both sides of each chicken breast.
- Cut 4 large pieces of heavy-duty aluminum foil. Drizzle each with a bit of olive oil.
- Place one chicken breast in the center of each foil piece. Top with black beans, corn, and diced bell peppers.
- Fold foil over contents and seal edges tightly to form packets.
- Grill or bake packets for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
- Carefully open packets and sprinkle cheese on top. Reseal and let sit for 2–3 minutes to melt.
- Garnish with cilantro and serve with lime wedges.
