Description

Sausage and Vegetable Soup is a hearty, flavorful soup packed with savory sausage, a variety of colorful vegetables, and herbs. It’s a comforting and nutritious meal perfect for any season.


Ingredients

  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups chopped spinach or kale
  • 1 tbsp chopped fresh parsley (optional for garnish)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Remove and set aside.
  2. In the same pot, sauté onion, garlic, carrots, and celery for 5-6 minutes until softened.
  3. Add zucchini and squash and cook for another 3-4 minutes.
  4. Return the sausage to the pot and add diced tomatoes, chicken broth, basil, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  6. Stir in chopped spinach or kale and cook for an additional 2-3 minutes until wilted.
  7. Serve hot, garnished with fresh parsley if desired.

  • Use turkey sausage for a lighter version.
  • This soup freezes well for meal prep.
  • Add cooked pasta or beans for extra heartiness.
