Description

A quick and delicious shrimp and egg stir-fry combining tender shrimp with fluffy scrambled eggs, flavored with garlic and green onions, perfect for a nutritious weeknight meal.

Ingredients

Scale

Egg Mixture

  • 8 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Stir-Fry

  • 1 tablespoon vegetable oil
  • 1 pound shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 2 green onions, thinly sliced

Instructions

  1. Whisk the eggs: In a medium bowl, whisk together the eggs, milk, salt, and black pepper until smooth and well combined. Set aside.
  2. Cook the shrimp: Heat the vegetable oil in a large skillet or wok over medium heat. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside to keep warm.
  3. Cook the garlic: Using the same pan, add the minced garlic and sauté for about 30 seconds until fragrant and slightly golden, taking care not to burn it.
  4. Scramble the eggs: Pour the egg mixture into the pan with the garlic and cook, stirring occasionally, until the eggs are mostly set but still a little soft and moist.
  5. Combine shrimp and eggs: Return the cooked shrimp to the pan and gently stir to combine with the scrambled eggs, letting the flavors meld for a minute.
  6. Garnish and serve: Remove from heat, garnish with the thinly sliced green onions, and serve immediately while warm.

Notes

  • Use fresh or fully thawed shrimp for best results.
  • If you prefer a creamier texture, add a little more milk to the eggs before whisking.
  • This dish pairs well with steamed rice or a light salad.
  • You can substitute vegetable oil with olive oil or sesame oil for a different flavor profile.
  • Adjust salt and pepper according to taste.
