Sloppy Joe Cornbread Casserole is a hearty and comforting dish that combines the savory, saucy flavor of Sloppy Joes with a sweet, golden cornbread topping, perfect for a family dinner.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1/2 green bell pepper, diced
  • 1 clove garlic, minced
  • 1 can (15 oz) sloppy joe sauce (or homemade)
  • 1 box (8.5 oz) cornbread mix (e.g., Jiffy)
  • 1/3 cup milk
  • 1 egg
  • 1/2 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion, bell pepper, and garlic; cook until softened, about 3–4 minutes.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat.
  4. Stir in sloppy joe sauce, bring to a simmer, and cook for 5 minutes. Season with salt and pepper to taste.
  5. Pour the meat mixture into a greased 8×8-inch baking dish and spread evenly.
  6. In a separate bowl, mix cornbread mix with milk and egg until just combined. Stir in cheddar cheese if using.
  7. Pour cornbread batter over the meat mixture and spread evenly.
  8. Bake for 20–25 minutes, or until the cornbread is golden and cooked through.
  9. Let cool slightly before serving.

  • You can use ground turkey or chicken as a leaner alternative to beef.
