- 1 lb ground beef
- 1 small onion, diced
- 1/2 green bell pepper, diced
- 1 clove garlic, minced
- 1 can (15 oz) sloppy joe sauce (or homemade)
- 1 box (8.5 oz) cornbread mix (e.g., Jiffy)
- 1/3 cup milk
- 1 egg
- 1/2 cup shredded cheddar cheese (optional)
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat. Add diced onion, bell pepper, and garlic; cook until softened, about 3–4 minutes.
- Add ground beef to the skillet and cook until browned. Drain excess fat.
- Stir in sloppy joe sauce, bring to a simmer, and cook for 5 minutes. Season with salt and pepper to taste.
- Pour the meat mixture into a greased 8×8-inch baking dish and spread evenly.
- In a separate bowl, mix cornbread mix with milk and egg until just combined. Stir in cheddar cheese if using.
- Pour cornbread batter over the meat mixture and spread evenly.
- Bake for 20–25 minutes, or until the cornbread is golden and cooked through.
- Let cool slightly before serving.
Notes
- You can use ground turkey or chicken as a leaner alternative to beef.
- Add a pinch of chili powder or cumin for extra flavor in the meat mixture.
- This recipe can be doubled and baked in a 9×13-inch dish for larger servings.
