Description
Tender chicken thighs slow-cooked in a sweet and savory honey garlic sauce.
Ingredients
- 2 lbs boneless skinless chicken thighs
- ½ cup honey
- ¼ cup low‑sodium soy sauce
- ¼ cup ketchup
- 3 tbsp hoisin sauce (optional for depth)
- 4 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 tbsp rice vinegar
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
- Salt and pepper, to taste
- Chopped green onions and sesame seeds for garnish
Instructions
- Season chicken thighs with salt and pepper and place in the slow cooker.
- In a bowl, whisk honey, soy sauce, ketchup, hoisin sauce, minced garlic, grated ginger, and rice vinegar until combined.
- Pour the sauce over the chicken in the slow cooker.
- Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until chicken is tender.
- Remove chicken and shred or leave whole as desired. Transfer sauce from cooker into a saucepan.
- Bring sauce to a gentle simmer, stir in cornstarch slurry, and cook until thickened (about 2–3 minutes).
- Return chicken to the sauce and stir to coat thoroughly.
- Serve over rice or noodles, garnished with chopped green onions and sesame seeds.
Notes
- Boneless skinless chicken thighs stay juicier than breasts.
- Adjust garlic and ginger for more intensity.
- Serve with steamed broccoli or snap peas for a balanced meal.
- Store leftovers in an airtight container in the fridge for up to 3 days.
