Description

Tender chicken thighs slow-cooked in a sweet and savory honey garlic sauce.

Ingredients

  • 2 lbs boneless skinless chicken thighs
  • ½ cup honey
  • ¼ cup low‑sodium soy sauce
  • ¼ cup ketchup
  • 3 tbsp hoisin sauce (optional for depth)
  • 4 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp rice vinegar
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • Salt and pepper, to taste
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. Season chicken thighs with salt and pepper and place in the slow cooker.
  2. In a bowl, whisk honey, soy sauce, ketchup, hoisin sauce, minced garlic, grated ginger, and rice vinegar until combined.
  3. Pour the sauce over the chicken in the slow cooker.
  4. Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until chicken is tender.
  5. Remove chicken and shred or leave whole as desired. Transfer sauce from cooker into a saucepan.
  6. Bring sauce to a gentle simmer, stir in cornstarch slurry, and cook until thickened (about 2–3 minutes).
  7. Return chicken to the sauce and stir to coat thoroughly.
  8. Serve over rice or noodles, garnished with chopped green onions and sesame seeds.

Notes

  • Boneless skinless chicken thighs stay juicier than breasts.
  • Adjust garlic and ginger for more intensity.
  • Serve with steamed broccoli or snap peas for a balanced meal.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
