Description

A hearty and flavorful slow cooker recipe featuring a whole chicken cooked to perfection over a bed of savory stuffing. Ideal for a no-fuss dinner with all the comforts of a traditional roast meal.


Ingredients

  • 1 whole chicken (4-5 lbs), giblets removed
  • 1 (6 oz) box stuffing mix
  • 1 cup chicken broth
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/4 cup melted butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Non-stick cooking spray


Instructions

  1. Spray the inside of your slow cooker with non-stick cooking spray.
  2. In a mixing bowl, combine stuffing mix, chicken broth, celery, onion, and melted butter. Mix until well combined and moist.
  3. Place the stuffing mixture at the bottom of the slow cooker and spread evenly.
  4. Season the whole chicken with garlic powder, onion powder, paprika, salt, and pepper.
  5. Place the seasoned chicken on top of the stuffing in the slow cooker, breast side up.
  6. Cover and cook on low for 6-8 hours or until the chicken reaches an internal temperature of 165°F (74°C).
  7. For crispy skin, transfer the cooked chicken to a baking sheet and broil in the oven for 3-5 minutes.
  8. Let the chicken rest for 10 minutes before carving. Serve with the stuffing from the bottom of the cooker.

Notes

  • Use a meat thermometer to ensure the chicken is fully cooked.
  • You can add sliced mushrooms or chopped apples to the stuffing for added flavor.
  • If your slow cooker is small, consider using a smaller bird or cutting the chicken into parts.
