Description
A hearty and flavorful slow cooker recipe featuring a whole chicken cooked to perfection over a bed of savory stuffing. Ideal for a no-fuss dinner with all the comforts of a traditional roast meal.
Ingredients
- 1 whole chicken (4-5 lbs), giblets removed
- 1 (6 oz) box stuffing mix
- 1 cup chicken broth
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1/4 cup melted butter
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper, to taste
- Non-stick cooking spray
Instructions
- Spray the inside of your slow cooker with non-stick cooking spray.
- In a mixing bowl, combine stuffing mix, chicken broth, celery, onion, and melted butter. Mix until well combined and moist.
- Place the stuffing mixture at the bottom of the slow cooker and spread evenly.
- Season the whole chicken with garlic powder, onion powder, paprika, salt, and pepper.
- Place the seasoned chicken on top of the stuffing in the slow cooker, breast side up.
- Cover and cook on low for 6-8 hours or until the chicken reaches an internal temperature of 165°F (74°C).
- For crispy skin, transfer the cooked chicken to a baking sheet and broil in the oven for 3-5 minutes.
- Let the chicken rest for 10 minutes before carving. Serve with the stuffing from the bottom of the cooker.
Notes
- Use a meat thermometer to ensure the chicken is fully cooked.
- You can add sliced mushrooms or chopped apples to the stuffing for added flavor.
- If your slow cooker is small, consider using a smaller bird or cutting the chicken into parts.
