Ingredients
Dry Ingredients:
- 1 cup sourdough starter (discard or active)
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients:
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter or oil
- 1 teaspoon vanilla extract
Instructions
- Dry Ingredients: In a large bowl, whisk together the sourdough starter, flour, sugar, baking powder, baking soda, and salt.
- Cooking: Lightly grease the skillet, then pour 1/4 cup of batter for each pancake. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook for another 1–2 minutes until golden brown and cooked through. Repeat with remaining batter.
- Serving: Serve warm with maple syrup, fruit, or yogurt.
Wet Ingredients: In a separate bowl, mix the milk, egg, melted butter, and vanilla. Pour the wet ingredients into the dry and stir until just combined. Do not overmix—some lumps are okay. Let the batter rest for 5–10 minutes while you preheat a non-stick skillet or griddle over medium heat.
Notes
- This recipe is a great way to use up sourdough discard.
- You can prepare the batter the night before (minus the baking powder and soda) and add them in the morning for quick cooking.
