- 1 cup long grain white rice
- 2 tablespoons vegetable oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 1/2 cups chicken broth
- 1 cup tomato sauce
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the rice and cook, stirring frequently, until golden brown, about 5 minutes.
- Add the chopped onion and minced garlic; cook until the onion is softened, about 2-3 minutes.
- Stir in the chicken broth, tomato sauce, cumin, chili powder, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to low and cover the skillet.
- Simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and garnish with fresh cilantro, if using.
- Serve warm.
Notes
- For a vegetarian version, substitute vegetable broth for chicken broth.
- Adjust the spices to your heat preference.
- Leftovers can be stored in the fridge for up to 4 days.
