- 1 lb sirloin or ribeye steak, cut into bite-sized cubes
- 1 lb baby potatoes, halved or quartered
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon butter
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Place the halved or quartered baby potatoes on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt, pepper, rosemary, and thyme. Toss to coat the potatoes evenly.
- Roast the potatoes in the preheated oven for 25-30 minutes, or until golden brown and crispy on the edges, flipping halfway through.
- While the potatoes are roasting, heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the steak cubes with salt and pepper, and add them to the skillet.
- Cook the steak bites for 4-6 minutes, stirring occasionally, until browned on all sides and cooked to your desired level of doneness.
- Add the minced garlic to the skillet with the steak bites and cook for an additional 1-2 minutes, until fragrant.
- Once the potatoes are done, remove them from the oven and add them to the skillet with the steak. Stir in the butter and toss everything together until well combined and heated through.
- Serve hot, garnished with fresh parsley. Enjoy!

- For added flavor, sprinkle some grated Parmesan cheese over the potatoes before roasting.
