Description

A moist and sweet quick bread bursting with fresh strawberry flavor, perfect for breakfast or dessert.


Ingredients

  • ¾ cup granulated sugar
  • ½ cup milk
  • ½ cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 cups diced fresh strawberries
  • 2 tbsp flour (for coating strawberries)
  • For glaze: 2 cups powdered sugar
  • 2 tbsp melted butter
  • â…“ cup finely diced strawberries
  • ½ tsp vanilla extract
  • 1–2 tbsp milk or cream (optional, for consistency)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together sugar, milk, oil, egg, and vanilla extract.
  3. In a separate bowl, mix flour, baking powder, and salt.
  4. Add dry ingredients to the wet ingredients and mix until just combined.
  5. Toss strawberries with 2 tablespoons of flour, then fold into the batter.
  6. Pour batter into the prepared loaf pan and bake for 50–55 minutes, or until a toothpick comes out clean.
  7. Let bread cool in the pan for 15–20 minutes, then transfer to a wire rack to cool completely.
  8. To make the glaze, mash strawberries and mix with powdered sugar, melted butter, and vanilla. Add milk or cream as needed for consistency.
  9. Drizzle glaze over cooled bread and allow it to set before slicing.

Notes

  • Use fresh, ripe strawberries for best flavor.
  • Don’t skip flouring the strawberries to prevent them from sinking.
  • Cool bread fully before adding glaze to avoid melting.
  • Store in an airtight container at room temperature or refrigerate if glazed.
