Description

Taco Potatoes are a delicious twist on taco night, combining baked potatoes with seasoned taco meat and your favorite toppings for a hearty, customizable meal.


Ingredients

  • 4 large russet potatoes
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 2/3 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the potatoes clean, prick them with a fork, rub with olive oil, and season with salt.
  2. Bake potatoes directly on the oven rack for 45-60 minutes until tender.
  3. While potatoes bake, heat a skillet over medium heat and cook ground beef until browned. Drain excess grease.
  4. Add taco seasoning and water to the meat, stir well, and simmer for 5 minutes until thickened.
  5. Once potatoes are done, slice each open and fluff the insides with a fork.
  6. Spoon taco meat over each potato, then top with cheese, sour cream, salsa, green onions, and cilantro if using.
  7. Serve immediately with additional toppings if desired.

Notes

  • You can use sweet potatoes for a healthier alternative.
  • Swap beef with beans or tofu for a vegetarian version.
