Taco Potatoes are a delicious twist on taco night, combining baked potatoes with seasoned taco meat and your favorite toppings for a hearty, customizable meal.
Ingredients
- 4 large russet potatoes
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 2/3 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup salsa
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Scrub the potatoes clean, prick them with a fork, rub with olive oil, and season with salt.
- Bake potatoes directly on the oven rack for 45-60 minutes until tender.
- While potatoes bake, heat a skillet over medium heat and cook ground beef until browned. Drain excess grease.
- Add taco seasoning and water to the meat, stir well, and simmer for 5 minutes until thickened.
- Once potatoes are done, slice each open and fluff the insides with a fork.
- Spoon taco meat over each potato, then top with cheese, sour cream, salsa, green onions, and cilantro if using.
- Serve immediately with additional toppings if desired.
Notes
- You can use sweet potatoes for a healthier alternative.
- Swap beef with beans or tofu for a vegetarian version.
