Instructions

  1. Preheat and Bake Tater Tots: Preheat your oven to 425°F (220°C). Spread the frozen tater tots in a single layer on a sheet pan and bake for 20–25 minutes until golden and crispy.
  2. Prepare the Eggs: While the tots are baking, whisk together the 6 large eggs with ½ cup milk, and season the mixture with salt and pepper. Heat 1 tablespoon of butter or oil in a nonstick skillet over medium heat, then scramble the eggs until they are fully cooked but remain soft. Set aside.
  3. Sauté Vegetables: Using the same skillet, add the diced bell peppers and red onion. Sauté for 3–4 minutes until the vegetables are tender but still vibrant.
  4. Assemble the Bowl: Divide the crispy tater tots evenly between serving bowls. Top each bowl with scrambled eggs, cooked sausage or bacon, sautéed vegetables, shredded cheddar cheese, and sliced green onions.
