- 1 Tbsp sesame oil
- 1/4 cup yellow onion, diced
- 2 garlic cloves, minced
- 1 Tbsp fresh ginger, minced
- 10 oz ground chicken
- 1/4 cup tamari or soy sauce
- 2 Tbsp Thai sweet red chili sauce
- Juice of 1 lime
- 1 tsp maple syrup or honey
- 1/3 cup cashews, chopped
- 1/4 cup green onions, chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup shredded carrots
- Butter lettuce leaves, for serving
- Sesame seeds, for garnish (optional)
Instructions
- Heat sesame oil in a skillet over medium heat. Add onion and cook until softened, about 2-3 minutes.
- Stir in garlic and ginger; cook for 1 minute until fragrant.
- Add ground chicken, season lightly with salt and pepper, and cook until browned and cooked through, about 4-5 minutes.
- In a small bowl, whisk together tamari, sweet chili sauce, lime juice, and maple syrup.
- Add chopped cashews to the pan and pour in the sauce mixture. Stir well and simmer for 2-3 minutes.
- Remove from heat and stir in shredded carrots, green onions, and cilantro.
- Spoon the chicken mixture into lettuce leaves and garnish with sesame seeds if desired. Serve immediately.
Notes
- Use tamari for a gluten-free option or soy sauce if gluten is not a concern.
- You can substitute ground turkey or tofu for chicken.
- Add chopped bell peppers or water chestnuts for extra crunch.
