Description

These kid-approved healthy Rice Krispie treats are a nutritious twist on the classic, made with wholesome ingredients and no refined sugar. Perfect for lunchboxes or after-school snacks!


Ingredients

  • 3 cups crispy brown rice cereal
  • 1/2 cup almond butter (or peanut butter)
  • 1/2 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt


Instructions

  1. Line an 8×8 inch baking dish with parchment paper.
  2. In a small saucepan over low heat, combine almond butter and honey. Stir until smooth and warm.
  3. Remove from heat and stir in vanilla extract and sea salt.
  4. In a large mixing bowl, pour the mixture over the rice cereal. Stir gently to combine without crushing the cereal.
  5. Press the mixture firmly into the prepared dish using a spatula or your hands.
  6. Refrigerate for at least 1 hour to set.
  7. Cut into squares and serve.

Notes

  • You can substitute peanut butter for almond butter if preferred.
