Description
These kid-approved healthy Rice Krispie treats are a nutritious twist on the classic, made with wholesome ingredients and no refined sugar. Perfect for lunchboxes or after-school snacks!
Ingredients
- 3 cups crispy brown rice cereal
- 1/2 cup almond butter (or peanut butter)
- 1/2 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/4 tsp sea salt
Instructions
- Line an 8×8 inch baking dish with parchment paper.
- In a small saucepan over low heat, combine almond butter and honey. Stir until smooth and warm.
- Remove from heat and stir in vanilla extract and sea salt.
- In a large mixing bowl, pour the mixture over the rice cereal. Stir gently to combine without crushing the cereal.
- Press the mixture firmly into the prepared dish using a spatula or your hands.
- Refrigerate for at least 1 hour to set.
- Cut into squares and serve.
Notes
- You can substitute peanut butter for almond butter if preferred.
- Add mini dark chocolate chips for a fun twist.
- Store leftovers in an airtight container in the fridge for up to a week.
