Ingredients
- 1 (9-inch) pie shell, pre-baked
- 4 large ripe tomatoes, sliced
- 1/2 teaspoon salt
- 1/2 cup chopped onion
- 1/4 cup chopped fresh basil
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup mayonnaise
- Freshly ground black pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Place sliced tomatoes in a colander, sprinkle with salt, and let drain for 10 minutes.
- Pat tomatoes dry with paper towels to remove excess moisture.
- Layer chopped onions in the bottom of the pre-baked pie shell.
- Add a layer of tomato slices and sprinkle with basil and black pepper.
- In a bowl, mix cheddar cheese, mozzarella cheese, and mayonnaise.
- Spread cheese mixture over the tomatoes.
- Bake for 30-35 minutes, or until the top is golden and bubbly.
- Allow to cool slightly before serving.
