Description

A rich and indulgent dessert, this Triple Chocolate Cherry Cake combines layers of chocolate cake with chocolate chips and juicy cherries, finished with a luscious chocolate ganache.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot water
  • 1 cup semi-sweet chocolate chips
  • 1 cup dark chocolate chunks
  • 1 1/2 cups pitted and chopped cherries (fresh or frozen)
  • 1/2 cup heavy cream (for ganache)
  • 4 oz dark chocolate (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the sugars, eggs, buttermilk, oil, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture and mix until smooth.
  5. Stir in the hot water slowly until the batter is well mixed.
  6. Fold in the chocolate chips, chocolate chunks, and chopped cherries.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  10. To make the ganache, heat the heavy cream until just boiling, then pour over the dark chocolate in a bowl. Let sit for 2 minutes, then stir until smooth.
  11. Once the cakes are cool, spread the ganache over the top of one layer, place the second layer on top, and cover the top with remaining ganache.
  12. Chill slightly before serving for cleaner slices.

Notes

  • Use fresh cherries when in season for the best flavor.
  • You can substitute sour cream for buttermilk if needed.
  • This cake can be stored in the refrigerator for up to 5 days.
  • Let the ganache set slightly before slicing for a cleaner cut.
