Description

These Ultimate Shredded Chicken Tacos are juicy, flavorful, and perfect for a quick weeknight dinner or a casual gathering. Packed with tender shredded chicken and vibrant toppings, they are sure to satisfy any taco craving.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 cup chicken broth
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/2 cup diced onion
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 1/4 cup chopped cilantro
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onions and cook until softened, about 3 minutes.
  2. Add chicken breasts to the skillet and sear for 2 minutes on each side.
  3. Pour in chicken broth and sprinkle taco seasoning, garlic powder, and smoked paprika over the chicken.
  4. Cover and simmer for 20-25 minutes, or until chicken is fully cooked and tender.
  5. Remove chicken from the skillet and shred using two forks.
  6. Return shredded chicken to the skillet and stir to coat with remaining juices. Simmer for another 5 minutes.
  7. Warm the tortillas in a dry skillet or microwave.
  8. Assemble the tacos by placing shredded chicken in tortillas and topping with lettuce, tomatoes, cheese, sour cream, and cilantro.
  9. Serve with lime wedges on the side.

Notes

  • Leftover chicken can be stored in the refrigerator for up to 3 days.
  • You can use rotisserie chicken for an even quicker meal.
