- 2 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 cup chicken broth
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1/2 cup diced onion
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese
- 1/4 cup sour cream
- 1/4 cup chopped cilantro
- Lime wedges, for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onions and cook until softened, about 3 minutes.
- Add chicken breasts to the skillet and sear for 2 minutes on each side.
- Pour in chicken broth and sprinkle taco seasoning, garlic powder, and smoked paprika over the chicken.
- Cover and simmer for 20-25 minutes, or until chicken is fully cooked and tender.
- Remove chicken from the skillet and shred using two forks.
- Return shredded chicken to the skillet and stir to coat with remaining juices. Simmer for another 5 minutes.
- Warm the tortillas in a dry skillet or microwave.
- Assemble the tacos by placing shredded chicken in tortillas and topping with lettuce, tomatoes, cheese, sour cream, and cilantro.
- Serve with lime wedges on the side.
Notes
- Leftover chicken can be stored in the refrigerator for up to 3 days.
- You can use rotisserie chicken for an even quicker meal.
- Try adding avocado slices or pickled onions for extra flavor.
