Description

Vanilla Custard Fruit Slices are elegant and refreshing dessert bars made with a buttery crust, creamy vanilla custard, and a colorful array of fresh fruit on top—perfect for parties or summer gatherings.


Ingredients

  • 1 sheet puff pastry, thawed
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 2 tsp vanilla extract
  • 1 tbsp unsalted butter
  • Assorted fresh fruit (strawberries, kiwi, blueberries, etc.)
  • 1/4 cup apricot jam (optional, for glaze)
  • 1 tbsp water (for thinning glaze)

Instructions

  1. Preheat oven to 400°F (200°C). Roll out puff pastry on a baking sheet and prick all over with a fork.
  2. Bake puff pastry for 12–15 minutes until golden and crisp. Let cool completely.
  3. In a saucepan, heat 1 1/2 cups of the milk over medium heat until steaming but not boiling.
  4. In a bowl, whisk together sugar, cornstarch, egg yolks, and remaining 1/2 cup milk until smooth.
  5. Slowly pour the hot milk into the egg mixture while whisking constantly.
  6. Return the mixture to the saucepan and cook over medium heat, whisking until thickened, about 3–5 minutes.
  7. Remove from heat and stir in vanilla extract and butter. Let custard cool slightly.
  8. Spread cooled custard evenly over baked puff pastry.
  9. Top with sliced fresh fruit in desired pattern.
  10. For a shiny glaze, warm apricot jam with water and brush over the fruit.
  11. Chill in the fridge for at least 1 hour before slicing and serving.

Notes

  • Use any seasonal fruit you like—berries, peaches, or grapes work well.
  • Make sure custard is fully cooled before adding fruit to prevent sogginess.
  • For extra stability, chill the assembled dessert for several hours or overnight before slicing.
