- 1 sheet puff pastry, thawed
- 2 cups milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 2 tsp vanilla extract
- 1 tbsp unsalted butter
- Assorted fresh fruit (strawberries, kiwi, blueberries, etc.)
- 1/4 cup apricot jam (optional, for glaze)
- 1 tbsp water (for thinning glaze)
Instructions
- Preheat oven to 400°F (200°C). Roll out puff pastry on a baking sheet and prick all over with a fork.
- Bake puff pastry for 12–15 minutes until golden and crisp. Let cool completely.
- In a saucepan, heat 1 1/2 cups of the milk over medium heat until steaming but not boiling.
- In a bowl, whisk together sugar, cornstarch, egg yolks, and remaining 1/2 cup milk until smooth.
- Slowly pour the hot milk into the egg mixture while whisking constantly.
- Return the mixture to the saucepan and cook over medium heat, whisking until thickened, about 3–5 minutes.
- Remove from heat and stir in vanilla extract and butter. Let custard cool slightly.
- Spread cooled custard evenly over baked puff pastry.
- Top with sliced fresh fruit in desired pattern.
- For a shiny glaze, warm apricot jam with water and brush over the fruit.
- Chill in the fridge for at least 1 hour before slicing and serving.
Notes
- Use any seasonal fruit you like—berries, peaches, or grapes work well.
- Make sure custard is fully cooled before adding fruit to prevent sogginess.
- For extra stability, chill the assembled dessert for several hours or overnight before slicing.
