Description

Watermelon and Cucumber Salad is a light, refreshing dish perfect for summer. With juicy watermelon, crisp cucumber, tangy feta, and fresh mint, it’s a delicious blend of sweet and savory flavors.

Ingredients

Units Scale
  • 4 cups seedless watermelon, cubed
  • 1 large cucumber, sliced and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine watermelon cubes, cucumber slices, and crumbled feta.
  2. Add chopped mint leaves and gently toss everything together.
  3. Drizzle with olive oil and lime juice, then season with salt and pepper to taste.
  4. Gently mix again and serve immediately, or chill for 15-20 minutes before serving.

Notes

  • Use English cucumber or Persian cucumbers for less bitterness and better crunch.
  • Chill ingredients before assembling for a cooler, more refreshing salad.
  • Best served the same day to avoid excess liquid from watermelon.
